Gluten-free Chicken Katsu

In the past few weeks, I’ve fallen into a pattern where I wasn’t trying anything new, food-wise. I am a decent cook, but there are a lot of things I don’t make on a regular basis. I am a fan of quick and easy meals from scratch. I think it’s genetic. My mom, the queen of Chopped style cuisine (“What can I make for dinner using a can of tomatoes, a can of black beans and some pasta?”), is as well.
